Blueberries are probably the ultimate superfood. They are rich in many nutrients: vitamins C and E, riboflavin, niacin, folate, carotenoids, iron, potassium, magnesium, manganese and several polyphenols. Their soluble fibre helps with both constipation and diarrhoea, and their tannins help reduce inflammation in the digestive system. Their uniquely high antioxidant content helps protect against a range of illnesses including heart disease, cancer, asthma, diabetes and cataracts. Indeed, one serving of blueberries has the same antioxidant benefit as five servings of other fruits and vegetables. Just one small teacup of blueberries offers the same anti-oxidant protection as 1,730 units of vitamin E and 1,200mg of vitamin C.
