This is a great recipe for using leftover rice.

Ingredients

*75g long-grain rice *1 onion *1 clove garlic *1 dsp chopped courgette *1 dsp mushrooms 41 each red, green and yellow pepper 41 dsp sweetcorn 41 tsp tomato puree *75g grated cheddar cheese *selection of fresh herbs, salt, pepper and mustard powder.

Children's age: All ages. Makes: Four servings

Preparation time: 20 minutes. Cooking time: 20 to 25 minutes. T = together A = adult

A Preheat the oven to 160xC.

T Measure out the rice, place in a saucepan, add a pinch of salt and pour over enough boiling water just to cover the rice. Cook for 8 to10 minutes, or until just cooked.
