Maple syrup drop scones

These make a nice change from pancakes.

Ingredients:

100g plain flour, 1/4 tsp salt, 1/4 tsp bicarbonate of soda, 100ml full fat milk, 1 egg, 50g maple syrup, vegetable oil for frying

Children's age: all ages

Makes: 20

Preparation time: 20 minutes

Cooking time: 10 minutes

T = together A = adult

T Sieve the flour, salt and bicarbonate of soda into a large mixing bowl.

T Using a wooden spoon, make a well in the middle of the flour.

T Stir half of the milk into the flour.

T Beat in the egg to make a thick batter.

T Gradually stir in enough milk until the batter resembles the consistency of double cream.

A Cover with cling film and leave to stand for 10 minutes, if time allows.

A With a pastry brush or kitchen paper, brush the base of a non-stick frying pan with a little oil, and then place it on a high heat.

A Drop a tablespoon of the batter into the frying pan, approximately 4cm in diameter. When small air bubbles appear on top of this drop scone, turn it over and cook for a further minute until it is golden brown.

T Serve drizzled with maple syrup.

NB: Depending on the size of your pan, you could cook several drop scones at once.
