Soda bread

Ingredients. 4325g plain flour, 1 tsp salt, 1 tsp bicarbonate of soda, 175g self-raising wholemeal flour, 1 tbsp black treacle, 450ml sour cream or butter milk

Makes: Four servings

Preparation time: 25 minutes

Cooking time: 25-30 minutes

A Pre-heat the oven to 200xC.

T Sift the plain flour, salt and bicarbonate of soda into a mixing bowl. Now add all the self-raising wholemeal flour and mix together well with a wooden spoon.

T Take a small bowl, add the treacle and sour cream/ buttermilk and mix together thoroughly.

T Make a well in the centre of the flour mixture, pour in the treacle and buttermilk mixture. Stir well until the mixture forms a dough.

T Scatter a clean surface with flour and then tip out the dough mixture. Take it in turns to knead the dough for approximately ten minutes and then form into a large round shape. Place the shaped dough on to a floured baking tray.

A Take a sharp knife and cut a deep cross in the top of the dough. Place the dough into the pre-heated oven for approximately 25-30 minutes.

To serve: leave the bread to cool and serve with butter or margarine.
