Rice pudding with sultanas

Ingredients: 500g pudding rice, 25g sugar, knob of butter, 25g sultanas, 600ml full fat milk, fresh vanilla pod or essence, freshly grated nutmeg, puree of fruit

T Preheat the oven to 140xC.

T Measure out the pudding rice, sugar, butter and sultanas.

T Measure out 600ml of milk and pour into a medium-sized saucepan. Add the vanilla pod or essence to the milk, remembering to cut through the pod and scrape out the pulp inside to release the flavour.

T Add the remaining ingredients except the nutmeg and puree, and bring to the boil, stirring occasionally to prevent the milk or sugar from burning.

T Simmer gently until all of the sugar has dissolved. This will take approximately 30 minutes.

T Butter four ramekins and spoon the rice pudding into the dishes. Sprinkle the top of each pudding with a little freshly grated nutmeg.

To serve: Rice pudding is delicious served with a puree of fruit on top.
