Summer couscous with roasted vegetables

Ingredients 200g couscous, 320ml boiling water, 1 red onion, 4 mixed peppers, 2 courgettes, 1 small tin of sweetcorn, 2 eggs, 1 aubergine, 3 tblsp of olive oil, salt and pepper to season, fresh herbs such as parsley and chives

Makes 4 servings

Preparation time 30 minutes

Cooking time 40 minutes

T= together A = adult

T Wash the vegetables. Top and tail the courgettes and cut into thin slices. Preheat oven to gas mark 6/1800C.

T Peel and slice onion. Cut the aubergine into 1cm slices. Cut the peppers in half and remove the seeds, then cut into slices.
