1 large onion, 4 large potatoes, 4 large carrots, 50g margarine, 50g plain flour, 1 tin sweetcorn, 600ml chicken or vegetable stock, pinch of salt, pepper and nutmeg fresh parsley, chives or coriander

A Take a sharp knife and finely chop one onion. Place in a saucepan and set aside. Let older children peel the potatoes and carrots using a sharp vegetable peeler, then cut them into small even-sized chunks. Place in a mixing bowl; cover with cold water.
